The perfect fillet knife for the freshwater angler!!!, June 29, 2015

I’ll start off by saying that I’ve probably filleted at least 10,000 fish in my life (mostly smaller freshwater fish like bluegills, crappies, perch, walleye, etc.)

This is an excellent fillet knife, especially for this price. I can’t speak to its longevity, for I’ve only cleaned about 50 fish with it thus far. Hopefully the edge holds up for a long time, because I love everything about this knife.

The scabbard is actually quite nice. I think it’s essential for a fillet knife to come with a sheath.

The handle is a very nice rubberized grip. It fits the hand well (well, my hands at least; I suppose that’s somewhat subjective.) Some knife handles just boggle me because they seem completely clumsy for a human hand. The texture is great because when you’re cleaning dozens of fish your hands will be wet and slippery; this knife stayed firm in my hands even when they were wet. That’s a big bonus in a fillet knife. I have a few Rapala knives; the blades are nice, but the wood handles are junk on them. I much prefer this type of handle.

Onto the most important function: the blade. I was quite impressed with the sharpness, but don’t expect this to cut quite like a $200 Japanese chef knife (I have Tojiros for the kitchen work.) The blade has just the right amount of flex to handle everything you might do with a fillet knife. I generally use my more flexible blades (like the Rapala knife has) for de-skinning, but I was easily able to remove the skin from smaller fish with this knife.

I also would add that this is, in my opinion, the perfect size knife for most freshwater anglers. You can fillet anything from a bluegill to a 20+ walleye with this size blade, no problem. So, if I only was able to have one knife with me, this would now by the one knife I’d take that can do all the tasks I need.

For filleting smaller fish like mackerel, I was looking for a shorter blade fillet knife that still had some flexibility to it, and was solid quality — this Rada R210 fit the bill perfectly. Would consider the Rada R200 more of an all-around fillet knife, but this one is indeed perfect for smaller torpedo-shaped fish like mackerel.

Sheath is great for outdoors, but this knife is also perfect for home kitchen use. Every bit comparable in quality to my Swiss Wenger fillet knives costing twice as much — and in general Rada seems to get solid reviews by professionals in the tough duty cycle of restaurant use. I did get the following Rada sharpener (more for steeling the edge as I understand it), but haven’t needed to use it on new knife so can’t comment yet.

Rada Cutlery Quick Edge Knife Sharpener with Hardened Steel Wheels (Designed for Rada Knives), R119
